The dishes that define a region are always eaten with bread and recommended with a nice glass of red wine, preferably natural. I’m talking about beans, which in the traditional Tuscan cuisine are often the main ingredient of our savoury dishes. The recipe that I propose today is a more “substantial” baked beans. The traditional recipe, made with white beans and sage, naturally, does not have sausage in it, but it goes perfectly, trust me!
Beans all’uccelletto
Ingredients for 4 people
1 clove garlic
400g of peeled tomatoes
400g of cooked cannellini beans
2 pork sausages
2 sage leaves
salt
freshly ground black pepper
La Maliosa biodynamic extra virgin olive oil
Method
In a saucepan, sauté a clove of peeled garlic with four tablespoons of olive oil, add the sausages without their skin and broken to small pieces with the sage leaves. Add the tomatoes, 1/2 cup of warm water, salt and pepper, and continue cooking, covered, over low heat. When the sauce has thickened, add the beans and cook for a few minutes. Serve the beans hot.
